This is a delicious and simple preparation that goes well with most Indian Breads and or Biryani's. Days when you can't be bothered about cooking a lengthy and sophisticated meal, this recipe comes in handy. Okhra is another Indian vegetable that is getting some prominence and fighting for a space on the western shopping mall, vegetable section.
It is one of the most heat resistant vegetable, which grows easily in the arid temperature zones of Northern India and Africa. It is cooked in various ways, and on this blog, sooner you will find some exciting ways to prepare them. Research suggests Okhra's slippery characteristic helps in lubricating the large intestine, preventing and soothing constipation. It is also a good source of Vitamin A, C; Iron and Calcium. This is one vegetable my Mom loves to cultivate in her garden, and she does it, year after year with great success.
