How to select fish

The following points must be bourne in mind when selecting fish.
- eyes should be bright and not sunken.
- gills should be red.
- the tail should be stiff.
- the flesh should be firm and not flabby.
- the scales if any should be plentiful.
- there should be no unpleasent odour.
- to test, take acut piece of the fish and press down with a finger and if an impression is left then the fish is stale.
- any tendency for the raw flesh to come away from the bone is a dangerous sign.
