Ingredients Vegetable Pickle

  • Small Bunch of Celery— 1
  • Small Head Cauliflower, cut into flowerets —1
  • Carrots, thinly sliced —-3
  • Small Courgettes —-3
  • Frozen Green Beans, cooked and drained —-20 ounces
  • White Onions, cooked—- 1 Small can
  • Marinate:
  • Vinegar —1/3 cup
  • Basil —-2 tsp
  • Salt —-1 tsp
  • Sugar —-1 tsp
  • Garlic —-5 Cloves (minced)
  • shallot or onion, —-1 (minced)
  • Whole White/Black Peppercorns —1/2 tsp

Preparation Direction

  1. Mix the vinegar, basil, salt, sugar, garlic, whole black peppercorns and finely chopped onion in a bowl.
  2. Add the vegetables into the above liquid and pour into a jar and leave overnight.
  3. Keep refrigerated and use upto 3 months.
