Ingredients Vegetable Pickle
- Small Bunch of Celery— 1
- Small Head Cauliflower, cut into flowerets —1
- Carrots, thinly sliced —-3
- Small Courgettes —-3
- Frozen Green Beans, cooked and drained —-20 ounces
- White Onions, cooked—- 1 Small can
- Marinate:
- Vinegar —1/3 cup
- Basil —-2 tsp
- Salt —-1 tsp
- Sugar —-1 tsp
- Garlic —-5 Cloves (minced)
- shallot or onion, —-1 (minced)
- Whole White/Black Peppercorns —1/2 tsp
Preparation Direction
- Mix the vinegar, basil, salt, sugar, garlic, whole black peppercorns and finely chopped onion in a bowl.
- Add the vegetables into the above liquid and pour into a jar and leave overnight.
- Keep refrigerated and use upto 3 months.
